IVAN SANCHEZ

Industrial I+D Chef Manager

After finishing his cooking studies, Ivan completed his training at El Bulli with Ferran Adriá, at Lasarte with Martin Berasategui, at El Celler with Joan Roca and at La Broche with Sergi Arola, joining the group in 2003 as the Executive Chef’s assistant and head of the group’s R&D, actively participating in the definition of all the concepts and projects undertaken. Taking advantage of his great technical knowledge, he joined the industrial part in 2018 to “industrialise” the recipes and develop new dishes proposals for this sector.

LUIS OLARRA

Head Chef Kabuki Raw

He joined Kabuki in 2011, after finishing his studies and completing his training in several restaurants, including Martín Berasategui in Lasarte. At Kabuki, he worked at Kabuki Wellington, opened the first Kirei at Madrid airport and in 2014 he joined Kabuki Raw as the chef, earning a Michelin star in 2015, a position he continues to hold today.

DAVID RIVERO

Head Chef Kabuki Gran Canaria

He joined Abama Kabuki in 2010, where he has developed most of his professional activity, except in 2015 when he moved to Ireland to complete his training. He has been the Head Chef of Abama Kabuki since 2017. Now he has joined the team that is going to open a new Kabuki in Gran Canaria as the Head Chef.

SEBASTIAN CASTILLO

Head Chef Kabuki Kōmori

Born in Chile, he has developed his entire professional career in Tenerife and mostly at Abama Kabuki which he joined in 2013. After that he joined Kabuki Wellington in 2019 and later on Kabuki Kōmori as chef in 2021.

VICTOR SERRANO

Head Chef Kabuki

Victor joined Kabuki Wellington in xxxx, where he was until xxxx when he became chef of Kirei in Teatriz and from there, after passing through Kabuki Kōmori as sous chef and having been in England completing his training, he became the chef of Kabuki restaurant.

ANDRES PEREDA

Head Chef Kabuki Lisboa

Before joining Kabuki in 2008, Andres worked in several restaurants, including Sacha and La Broche. At Kabuki, he started at Kabuki (Presidente Carmona) and later worked at Kabuki Wellington and Kirei Teatriz until he joined Kabuki Kōmori as the chef in 2012, a position he held until the summer of 2021, when he joined Kabuki Lisboa as the chef.
